Metxcalli, of Nahuatl origin meaning cooked agave, was born from the desire to rescue traditions, to pamper the palate, to recreate ephemeral flavors that make each visit unrepeatable.
Our inspiration is Oaxaca, multifaceted and vibrant, which transports us to a journey of infinite aromas and flavors that activates our five senses and evokes the grandeur of the markets, the complexity of its mezcals and the pluralism of its culture and identity.
Born on Oaxacan shores, Chef Gerson Madrid experiments and captures the colors of traditional flavors, like a painter on his canvas and characterizes them with thick contemporary strokes, taking us through an adventure of flavors that have their own personality, that evoke our land, our southern Oaxacan cuisine and our own home.
Throughout his career, the Chef has traveled the country in search of seasonings and experiences that complement the Metxcalli experience.
We are a small restaurant committed to small local producers, trusting them and the products they offer us. The nobility of our Oaxacan land allows us to take our diners from the coast with our seafood, to the Cañada with the peculiar flavor of its fruits, to our Central Valley with its vegetables and mezcal.
In order to highlight our culture we have created an Art Gallery, a space for the talent of our region, where we hold gastronomic events that seek to promote and highlight the works of our artists, reiterating the importance of cultural spaces in this area of the state.
